Dorset Roast Chicken

Dorset garlic herb butter roast chicken with homeley flavours, crispy skin, and incredible tender.


  • 1 Vines farm free range chicken
  • Garlic
  • Butter
  • Lemon
  • Rosemary
  • Parseley
  • Touch of white wine or half a small glass of beer


  1. Get your oven on
  2. If the chicken is a little moist on the sin, pat or with some kitchen towel until dry.
  3. Mix olive oil and some melted butter, rub all over the chicken and massage into the skin.
  4. Season the chicken outside and inside with salt, pepper and parsley. Don’t be afraid to use generous plenty for added flavour.
  5. Rub some minced garlic over the chicken and under the skin.
  6. Place the garlic head into the chicken cavity along with rosemary sprigs and a pricked lemon. You can also add any other herbs you have spare in the kitchen.
  7. Place in the oven and roast until fully cooked, basting half way through.
  8. Finally increase the oven tempurature and cook for a further couple of mins until the skin is lovely golden and crispy
