A fabulous soup perfect to get you through till dinner on a cold winters day.
Ingredients
- Rapeseed oil or butter
- 1 onion or leek
- 1 medium potato
- 1 large head of broccoli or purple sprouting broccoli if in season
- 1L Vegetable stock
- 100ml Double cream
- Blue Cheese
Directions
- Heat a large saucepan and add either a glug of rapeseed oil or tablespoon of butter and then add 1 finely chopped onion or leek. Cook on a medium heat until soften and then add the diced potato and cook for a few minutes before adding the chopped broccoli and hot vegetable stock.
- Cover and leave to simmer for approximately 15 minutes under the potatoes and broccoli are tender.
- Blend with either a hand blender or let cool slightly and put into a blender
- Add in your desired amount of cheese, I like it slightly milder so I use approx. 60g but you can use as much or as little as you like
- Drizzle the double of cream and serve with fresh bread or croutons
With the winter looming there is nothing better than a warm bowl of soup to warm you through on a cold winters day! One of my favourites is broccoli and stilton (even though I wouldn’t say I’m a huge lover of blue cheese). This recipe however uses one of our lovely locally made blue cheeses called Dorset Blue Vinny rather than the traditional Stilton.
Dorset Blue Vinny is made at Woodbridge farm located in the heart of Dorset near Sturminster Newton (not Marshall, so confusing!). This has been home to the Davies family who resurrected the 300 year old recipe and have been making cheese for over 40 years. Dorset Blue Vinny was awarded a ‘GOLD’ award at the World Cheese Awards and won ‘Best Blue’ & ‘People’s Choice’ at the Great British Cheese Awards so its defiantly a winning cheese!
A great way to get your five a day, Broccoli is not only a lovely British product usually in season normally October to April, it is a rich source of vitamins C and K. / I normally make double the recipe and pop a portion in the freezer as it’s a firm family favourite here, even my toddler likes it and a great way for her to expand her taste buds!
